Milton
Enriquez
Throughout the years, the
kitchen at Compass has seen a lot of faces, but one has stayed the same. Milton
Enriquez has been with Compass since its opening in 2002. Milton has worked with
some of the city's finest chefs in a myriad of three star restaurants during his
20 years in the kitchen. He began his journey at the three star, Arizona 206,
with Brendan Walsh then work for China Grill and Sign of the Dove.
Over the next 7 years, he worked with Geoffrey Zakarian at the Royalton, Brian
Good at Fire Bird and Eleven Madison as Chef de Partie Saucier. His last move
landed him on the line at Compass with Neil Annis, opening Compass with great
reviews. Over the years, Milton has seen a change at the helm several times but
has always been the backbone of the kitchen. Milton has once again been reunited
with Chef Annis to create award winning cuisine.
